Black and Red Bean Salad with Basil Lemon Dressing
An easy and refreshing salad that is packed with protein and dressed with a simple basil lemon vinaigrette

INGREDIENTS
1 pint of grape or cherry tomatoes, halved
1 (15-ounce) can organic black beans, rinsedand drained
1 (15-ounce) can organic red beans, rinsedand drained
1 (15-ounce) can corn, drained
2 avocados, peeled and cubed
4 green onions, thinly sliced
Basil Lemon Dressing
1/2 cup chopped fresh basil
juice of 1 lemon (about 3 tablespoons)
3 tablespoons extra virgin olive oil
1 small shallot, minced
1 clove minced garlic
1/2 teaspoon salt
freshly ground black pepper to taste
DIRECTIONS
Mix the tomatoes, black and red bean, corn, avocados, and green onions in a large bowl.
Whisk together the ingredients for the basil dressing in a small bowl. Pour over the tomato and bean mixture and toss together.
