Cauliflower Vegetable Pizza
Preparing a cauliflower crust is a wonderful way to make a gluten-free pizza that is low in calories and loaded with extra nutrients. Making cauliflower pizza takes some added steps and some extra time, but it is worth the effort. I bake the cauliflower crust and the vegetables at the same time, so that the ingredients for the pizza are ready to assemble.

INGREDIENTS
Cauliflower crust
1 head cauliflower
2 eggs
¼ teaspoon salt
freshly ground black pepper to taste
Roasted vegetable toppings
1 eggplant sliced
2 zucchini, sliced
1 pint grape tomatoes (I used heirloom), halved
2 cloves garlic, minced
olive oil
salt and pepper to taste

prepared cauliflower crust
2 - 4 tablespoons marinara sauce
prepared roast vegetable toppings
¼ cup shredded mozzarella cheese (optional)
1 head cauliflower
2 eggs
¼ teaspoon salt
freshly ground black pepper to taste

1 eggplant sliced
2 zucchini, sliced
1 pint grape tomatoes (I used heirloom), halved
2 cloves garlic, minced
olive oil
salt and pepper to taste

prepared cauliflower crust
2 - 4 tablespoons marinara sauce
prepared roast vegetable toppings
¼ cup shredded mozzarella cheese (optional)
DIRECTIONS
Cauliflower crust
Preheat the oven to 400˚ F.
Cut the cauliflower into florets. Using a food processor, pulse the cauliflower in batches.
Place the cauliflower (about 2 cups) in a microwave safe dish and microwave for about 8 to 10 minutes. Use a clean dish towel to remove excess water.
Mix the cauliflower with the eggs, salt and pepper. Line a baking sheet with parchment paper and shape the cauliflower into a circle. Bake for 20 minutes.
Roasted vegetable toppings
Line a rimmed baking sheet with parchment paper.
Brush the sliced eggplant and zucchini with olive oil and garlic and season with salt and pepper.
Roast for 15 minutes at 400, turning once.
Toss the tomatoes with olive oil, salt and pepper and roast for 15 minutes at 400.
Assembling the pizza
Place a thin layer of marinara sauce over the cauliflower crust. Place the vegetables on top. Sprinkle the mozzarella cheese (optional) and bake an additional ten minutes.
