Farro Salad with Avocados and Dried Fruit


This vegetarian recipes uses farro, a healthy grain with a mild, nutty and pairs it with dried fruit and fresh herbs for a delightful salad.


Servings: 4 | Prep time: 15 min | Cook time: 30 min

INGREDIENTS


1 cup farro
10 dried apricots, chopped into 1/4 inch
pieces
2 tablespoons raisins
2 tablespoons golden raisins
2 avocados, cubed
2 green onions, thinly sliced
1/4 cup chopped fresh mint
1/4 cup chopped fresh parsley


Vinaigrette
2 tablespoons red wine vinegar
2 tablespoons fresh lemon juice
4 tablespoons extra virgin olive oil
1/2 tablespoon Dijon mustard
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper

DIRECTIONS

Prepare farro according to package directions. Allow to cool.
Mix the farro, dried apricots, raisins, golden raisins avocados, green onions, mint and parsley in a large bowl.
Combine all the ingredients for the vinaigrette in a small bowl and whisk together
Pour the vinaigrette over the farro salad and gently toss together.
