Hawaiian Chicken


An easy chicken recipe to prepare with sweet and sour flavors, and made from natural ingredients without any processed sauces.


Servings: 4 | Prep time: 20 min | Cook time: 1 hour 30 min

INGREDIENTS

1 chicken, cut in 8ths, skin with excess
fat removed
1/4 cup flour
2 tablespoons canola oil, divided
1 medium onion, chopped
1 green pepper, diced
2 cloves minced garlic
1 tablespoon reduced sodium soy sauce
1 teaspoon grated ginger
1 (8-ounce) can tomato sauce
2 tablespoons lemon juice
1 (20-ounce) can pineapple chunks in pineapple juice

DIRECTIONS

Dredge the chicken in the flour.
Heat 1 tablespoon of canola oil in a large Dutch oven over medium heat. Add the chicken to the pan and brown both sides. Remove the chicken from the pan and set aside. Drain any excess fat.
Add the second tablespoon of canola oil to the pan and sauté the onions and green peppers with the minced garlic, ginger, and soy sauce for approximately 5 minutes. Add the tomato sauce, lemon juice, and pineapple (with the pineapple juice) and bring to a boil.
Nestle the chicken pieces between the pineapple and the vegetables. Reduce the heat to a simmer and cook, covered for 1 hour and 15 minutes.
