Jeweled Rice with Dried Fruit, Almonds and Pomegranate Seeds


This beautiful dish has it all – complex flavors with the sweetness of the dried fruits and the crunchy texture of the almonds.


Servings: 4 | Prep time: 15 min | Cook time: 30 min

INGREDIENTS


2 cups cooked basmati rice, prepared
according to package directions
4 green onions, thinly sliced
1/2 cup sliced dried apricots
1/4 cup golden raisins
2 tablespoons lemon juice
3 tablespoons extra virgin olive oil
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon cumin
1/3 cup pomegranate seeds
1/3 cup slivered almonds, toasted
¼ cup chopped fresh cilantro or parsley

DIRECTIONS

Allow cooked rice to cool in a large mixing bowl.
Add the green onions, apricots and golden raisins to the bowl and combine.
Whisk together the lemon juice, olive oil, salt, pepper, and cumin. Pour over the rice and dried fruit and mix together.
Prior to serving, add the pomegranate seeds, almonds and cilantro and toss together.
