Oatmeal and Raisins Topped with Sliced Pears and Toasted Coconut
Who said oatmeal had to be boring? In less than 10 minutes, you can make this healthy, nutritious and yummy bowl of oats!

INGREDIENTS
1 cup old-fashioned rolled oats
1 ¾ cups water (or reduced fat milk)
Dash salt
1 tablespoon raisins
2 tablespoons unsweetened coconut,flaked or shredded
1/8 teaspoon ground cinnamon
1 Bosc pear, thinly sliced
DIRECTIONS
Combine the oats, water (or milk), salt and raisins in a small saucepan. Over medium heat, bring to a boil. Then reduce heat to simmer and cook, uncovered, until the liquid is absorbed.
Place the coconut in a small skillet. Cook over medium heat, stirring frequently, until the coconut turns golden brown. This should take no more than a few minutes.
Serve the oatmeal with sliced pears and toasted coconut and sprinkle with cinnamon.
