Oven Baked Zucchini and Roasted Pepper Omelettes

INGREDIENTS
cooking spray
1 tablespoon olive oil
2 medium zucchinis, coarsely grated
1 small onion, finely chopped
1 roasted red pepper, coarsely chopped
6 beaten eggs
1/2 teaspoon salt
freshly ground black pepper to taste
1 tablespoon chopped fresh basil or 1 teaspoon dried basil
DIRECTIONS
Preheat the oven to 350˚ F and spray a muffin or brownie tin with cooking spray.
Heat the olive oil in a large skillet. Sauté the zucchini, onions and peppers until the vegetables have softened.
Add the salt and pepper and basil and stir to combine. Remove from heat.
Add the eggs to the vegetables and then spoon the mixture into muffin or brownie tins.
Bake 25 minutes until golden brown.
