Pecan Coconut Date Treats
These date treats require no baking and are sweetened by the natural sugar of the dates and the coconut. The pecans provide flavor and texture. Rolled in shredded coconut, they look like snowballs. You can also dust them with cocoa powder.

INGREDIENTS
1 cup pecans, unsalted
1/2 cup pitted Medjool dates
2 tablespoons shredded unsweetened coconut
2 tablespoons unsweetened cocoa powder
2 tablespoons water
1 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Topping
2 tablespoons shredded unsweetened coconut or
2 tablespoons unsweetened cocoa powder
DIRECTIONS
Place the pecans in a food processor and pulse until coarsely ground. Add the Medjool dates and pulse until combined. Add the coconut, cocoa powder, water, vanilla extract and cinnamon and pulse for 2-3 minutes until combined. Remove from the food processor and chill for 30 minutes.
Form the “dough” into golf ball sized balls and roll in the coconut or cocoa powder.
Store in the refrigerator until ready to serve.
