Pumpkin Pancakes (Sugar-free)



These delicious pancakes are not only sugar free, but have added fiber and vitamins from the pumpkin. These pancakes feel like true comfort…and a hug. Enjoy!


Servings: 8 | Prep time: 10 min | Cook time: 15 min

INGREDIENTS


2 1/2 cups unbleached white 2 teaspoons
baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 eggs, beaten
2 cups buttermilk
1 cup pumpkin puree
1/4 cup maple syrup
1/4 cup canola oil
1 teaspoon vanilla extract
canola oil for cooking the pancakes

DIRECTIONS

Mix the flour, baking powder, baking soda, cinnamon, nutmeg and salt in a large bowl.
Mix the eggs, buttermilk, pumpkin, maple syrup, canola oil, and vanilla extract in a medium bowl.
Mix the wet and dry ingredients together until thoroughly combined.
Heat the canola oil in a large skillet and spoon the batter into the skillet. Cook until the edges are lightly browned and then flip and cook for another couple of minutes. Serve with maple syrup.
