Red Leaf Lettuce Salad with Pears and Pomegranates
This refreshing salad is light and easy to make. It looks beautiful too with the bright red pomegranate seeds nestled among the reds and greens of the lettuce.

INGREDIENTS
1 medium head red leaf lettuce,
1 Bosc pear, thinly slice
½ cup goat cheese, crumbled
1/3 cup pomegranate seeds
½ cup pecans, toasted
Vinaigrette
3 tablespoons extra-virgin olive oil
3 tablespoons balsamic vinegar
2 tablespoons honey
1 clove minced garlic
1/2 teaspoon kosher salt
freshly ground black pepper to taste
DIRECTIONS
Whisk together the olive oil, balsamic vinegar, honey, garlic, salt and pepper in a small bowl.
Add the vinaigrette to the lettuce and gently toss together.
Top with pear slices, goat cheese, pomegranate seeds, and pecans.
