Red Quinoa and Kale Bowl
This simple dish combines the natural wholesome flavors of sweet potatoes and onions in a grain bowl made with protein-rich quinoa and vitamin-loaded kale.

INGREDIENTS
3/4 cup red quinoa
2 sweet potatoes, peeled and cubed
2 tablespoons olive oil, divided
2 teaspoons salt, divided
freshly ground black pepper
1 onion, halved and sliced
2 cloves garlic, minced
8 ounces baby kale
DIRECTIONS
Preheat the oven to 400˚ F.
Prepare the quinoa according to package directions.
Toss the sweet potatoes with 1 tablespoon of olive oil, and salt and pepper to taste. Place on a baking sheet and roast for 20 minutes.
Heat the olive oil in a large skillet and add the onions. Sauté for about 10 minutes, stirring occasionally. Add the garlic, the remaining salt and pepper and mix. Add the baby kale and cook for a couple of minutes until the kale is wilted. Remove from heat.
Combine the sautéed onions and kale with the sweet potatoes and red quinoa and serve.
