Salmon with Tomato Salsa
A quick and easy meal to prepare that is healthy and delicious. The salmon requires minimal preparation. Prepare the colorful and fresh tasting salsa while the fish is cooking.

INGREDIENTS
Fish
4 (6-ounce) salmon fillets
salt and pepper to taste
½ teaspoon paprika
Tomato Salsa
2 plum tomatoes, seeded and chopped
4 ounces yellow cherry tomatoes
1 small red onion
¼ cup chopped fresh parsley
2 tablespoons fresh lemon juice
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon pepper
DIRECTIONS
Preheat oven to 375˚ F.
Season the salmon with salt, pepper and paprika and place on a baking sheet. Bake 18 to 20 minutes, depending upon the thickness of the salmon.
To make the salsa, mix the plum tomatoes, cherry tomatoes, red onion and parsley in a medium bowl.
In a small bowl, whisk together the lemon juice, olive oil, salt and pepper. Pour over the tomato mixture and gently mix together.
Serve the tomato salsa with the salmon.
