Strawberry and Watercress Salad



This is a terrific summer salad. You can easily substitute different ingredients such as lettuces, or berries. I chose mixed greens and watercress to balance the sweetness of the berries.


Servings: 4 | Prep time: 15 min

INGREDIENTS


Salad
4 ounces mixed greens (about 4 cups)
1 bunch watercress (4 ounces), stems
removed and chopped (about 3 cups)
1 small red onion, quartered and thinly sliced
1 cup sliced strawberries
1/4 cup sliced almonds, toasted
1/3 cup crumbled goat cheese (optional)

Vinaigrette
3 tablespoons extra-virgin olive oil
3 tablespoons red wine vinegar
2 tablespoons honey
1 tablespoon Dijon mustard
1 clove minced garlic
1/2 teaspoon kosher salt
freshly ground black pepper to taste

DIRECTIONS

Toss together the mixed greens, watercress, red onion and strawberries in a large bowl.
Whisk together the olive oil, red wine vinegar, honey, mustard, garlic, salt and pepper in a small bowl.
Add the vinaigrette to the salad and toss.
Top with sliced almonds and goat cheese and serve.
