Sweet and Sour Grilled Chicken with Peppers and Pineapple

INGREDIENTS
4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 red pepper
1 orange pepper
1 yellow pepper
1 large onion
1 pineapple trimmed and sliced; juice reserved for marinade
Marinade
reserved pineapple juice
2 tablespoons honey
2 tablespoons white wine vinegar
2 tablespoons olive oil
2 cloves minced garlic
½ teaspoon salt
¼ teaspoon black pepper
DIRECTIONS
Mix the ingredients for the marinade and place ½ of the marinade, with the chicken, in a Ziploc bag. Refrigerate for one hour.
Heat one tablespoon of olive oil and sauté the peppers and onions with the remaining half of the marinade for about ten minutes until the vegetables have softened.
Grill the chicken breasts 6 minutes per side (depending on the thickness of the chicken breasts), along with the pineapple.
Serve with the sautéed peppers and onions.
