Waldorf Salad with Kohlrabi and Pomegranates
A modern twist on a traditional Waldorf salad by adding kohlrabi and pomegranates. The dressing uses plain Greek yogurt and honey. I used Jonagold and Crispin apples for contrast in color and taste. Feel free to experiment with your favorite types of apples.

INGREDIENTS
1 Jonagold apple, cored and cubed
1 Crispin apple, cored and cubed
1 kohlrabi, trimmed, peeled and cubed,
2 stalks celery, thinly sliced
1/3 cup raisins
1/3 cup toasted walnuts
4 ounces fat free plain Greek yogurt
2 tablespoons lemon juice
2 tablespoons honey
1/3 cup pomegranate seeds
DIRECTIONS
Mix the apples, kohlrabi, celery, raisins, and walnuts in a large bowl.
Mix together the Greek yogurt, lemon juice and honey in a small bowl and then combine with the apple celery mixture.
Add the pomegranate seeds and gently toss together.
