Whole Wheat Orzo with Tuscan Kale


This is a simple dish packed with flavor and nutrients. The nutty flavor of the whole wheat orzo, along with the earthy kale work beautifully with the Mediterranean flavors of sun dried tomatoes and garlic.


Servings: 4 | Prep time: 10 min | Cook time: 25 min

INGREDIENTS


1 1/2 cups cooked whole wheat orzo,
prepared according to package directions
2 tablespoons olive oil
1 large onion, halved and thinly sliced
2 cloves minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
1 bunch kale, ribs removed and leaves sliced
1/4 cup chopped sun-dried tomatoes in oil, drained and sliced
1/4 cup freshly grated Parmesan cheese (optional)

DIRECTIONS

Heat the olive oil in a large skillet and add the onions. Sauté for about 10 minutes, stirring occasionally. Add the garlic, salt and pepper and continue to sauté the onions until they become golden, about 20 minutes.
Add the kale, in batches and continue to sauté until the kale is wilted. Add the sun-dried tomatoes and combine.
Toss with the whole wheat orzo. Mix in Parmesan cheese and serve.
