Wild Rice with Baby Kale and Caramelized Onions
The caramelized onions provides a sweetness, in contrast to the nutty flavors of the wild rice in this rustic dish.

INGREDIENTS
1/2 cup wild rice or wild rice blend
1 tablespoon olive oil
2 onions, halved and sliced
2 cloves minced garlic
1/2 tablespoon salt
1/4 teaspoon black pepper
8 ounces mushrooms, sliced
5 ounces baby kale
DIRECTIONS
Prepare the wild rice according to package directions.
Heat the olive oil in a large skillet and add the onions. Sauté for about 10 minutes, stirring occasionally. Add the garlic, salt and pepper and continue to sauce the onions until they become golden, about 20 minutes.
Add the mushrooms and continue to cook until they soften. Add the baby kale and cook for a couple of minutes until the kale becomes wilted.
Remove from heat, combine with the wild rice and serve.
