Rosette-Apple-Cake_600X600This delicious apple cake, made with fresh apples, pecans and cinnamon, is absolutely gorgeouswith its radial pattern of sliced apples. Vegetable oil and apple cider replace solid fats, making this moist cake dairy free. I have gotten so many requests on how to make the floral pattern with the sliced apples, that I will share my secrets!

I start out with wholesome ingredients and use canola oil instead of solid fats. To prepare the spring form pan, I use a mister filled with canola oil. I have two in my ingredients apple rosette cakekitchen. One is filled with olive oil and the second is filled with canola oil. I do not keep cooking spray in my house. If you read the ingredients, you will find that they contain propellant! Yes. Really!

Now, we can back to the recipe. Preheat the oven to 350˚ F.  Mix the flour, brown sugar, sugar, baking soda, cinnamon and nutmeg in a large bowl.

Next, mix the eggs, canola oil, apple cider and vanilla extract in a medium bowl. Stir the wet ingredients into the dry ingredients until thoroughly mixed. Gently fold in the chopped apples and pecans. Spoon the batter into the prepared spring form pan.

Now is the fun part. The top layer of this gorgeous delectable cake consists of sliced apples and a little cinnamon and sugar. I am lightslicedapples rosettecake handed with the sugar and heavy handed with the cinnamon. I make an outer ring of sliced apples along the periphery of the cake. In order to make a flower pattern, I sprinkle the apple slices with more cinnamon along the inner portions. This will create a shadow-like affect mimicking the appearance of the petals made by the apple slices.


Next, I place a second inner circle of apple slices, slightly overlapping each other. I sprinkle moreapple rosette cake4 cinnamon in the center of the ring. apple rosette cake3 Can you see the flower forming before your very eyes?  You haven’t even baked it yet and the scent of cinnamon is wafting through the air!  Just wait until it goes in the oven!


Last step: I sprinkle more cinnamon in the center and then sprinkle all of the apples with one tablespoon of sugar. Bake for one hour and fifteen minutes. Let cool before removing from the spring form pan and enjoy!
