Apple Walnut Muffins (Sugar-free)


As I opened my oven, I was overcome by the delectable aroma of home made muffins. I grabbed my camera and took this picture, while wishing that I could photograph the smell and taste of these sugar free muffins. Enjoy!


Servings: 12 | Prep time: 15 min | Cook time: 25 min


INGREDIENTS


1 1/2 cups flour
1/2 cup old fashioned oats
1/2 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 eggs, beaten
1 cup buttermilk
1/4 cup honey
1/4 cup maple syrup
1/3 cup canola oil
1 teaspoon vanilla extract
1 banana, mashed
1 apple, peeled and chopped
1/4 cup chopped walnuts
1/4 cup raisins

Topping (optional)
1 tablespoon old fashioned oats
2 tablespoons chopped walnuts
¼ teaspoon cinnamon

DIRECTIONS

Preheat oven to 350˚ F. Line a muffin tin with paper inserts.
Mix the flour, oats, baking powder, baking soda, cinnamon and salt in a large bowl.
Mix the eggs, buttermilk, honey, maple syrup, canola oil, and vanilla extract in a medium bowl. Add the mashed bananas, chopped apples, walnuts and raisins and combine.
Stir the wet ingredients into the dry ingredients until thoroughly mixed.
Spoon the batter into individual muffin cups. Sprinkle with oats, chopped walnuts and cinnamon.
Bake 25 minutes or until golden brown.
